Meal Plan for week 5/31-6/3

Yesterday, my husband smoked a pork shoulder and a whole chicken. So, this weeks meal plan is all about repurposing the leftovers.


I have made “clean” cornbread in the past using yogurt instead of butter. But, this is the recipe my family likes so this is the one I make. A little butter here and there is okay. I also, add 3/4 of a cup of thawed or fresh blanched corn. I never use the aerosol cooking spray. I have a pump oil spray bottle that I fill with olive oil. It works great! I didn’t have any purple cabbage so I only used green. I added about 1/3 a cup of sliced red onion and one sliced carrot. Use what you have and make recipes your own!

We have a lot of chicken leftover. I am going to make two batches of taquitos, one for dinner and one to freeze. You can also use rotisserie chicken for this recipe.

I will not be frying my corn tortillas. I heat them up on a griddle or in the microwave.
